Beans are great food sources in helping a person lose excess weight combined with a regular exercise plan, without the need for ‘fad dieting’.

Minestrone is a classic Italian soup which usually contains vegetables, beans, and pasta or rice. It is a hearty and filling soup and can be a complete meal in itself. Here is my recipe for Vegetarian Minestrone Soup.

A close friend is grieving the loss of her husband, and comfort food to her means soup. So even though the weather here so far this winter has been alternating between rainstorms and hot days, and I have heat rashes every day, I made more soup for her.

This time it was minestrone, a hearty classic. You wouldn’t think a mixture of vegetables, beans and pasta would be so tasty, but it is.

If you use pasta and are vegan, check to be sure eggs are not one of the ingredients. And the black beans were a mistake. I meant to put kidney beans, but I was looking at the can next to the one I grabbed, since they are usually in separate sections in my pantry. But when I opened it, I discovered it was black beans, so I added them and then another can of kidney beans also. They taste great, and my friend prefers black beans anyway, so it’s just as well.

Last week, I saw that Jackie, who writes the amazing blog Jackie’s Kitchen, posted a terrific looking vegetarian chili recipe with black beans and sweet potatoes. It got me thinking that it had been too long since I made a really delicious simple chili recipe. The only problem was that I didn’t have nearly enough of the ingredients handy to make Jackie’s vegetarian chili recipe, so I made my own dish. Okay, well to be honest this easy chili recipe doesn’t resemble Jackie’s chili in the slightest. However, she did inspire me to make a chili, so that’s got to count for something, right?

I call this an everything but the kitchen sink chili because, well, it seemed like I threw in the most random ingredients I could. Truthfully, that’s more or less how this vegetarian chili recipe came to be. I had a few staple items in my kitchen and I decided to be bold with them. I remember as a kid going to restaurants and seeing everything-but-the-kitchen-sink burgers on the menu. I was always disgusted by the combos they came up with, but I was intrigued by the idea. From the seemingly chaotic array of ingredients comes a deliciously simple chili recipe that is perfect for a cold winter day.

An Everything-But-The-Kitchen-Sink Vegetarian Chili Recipe

Serves: 6-8

Ingredients:

1 large can crushed tomatoes 2 cans diced tomatoes, with liquid Vegetable broth or stock, as needed (optional) 1 cup barley (use brown rice or buckwheat if on a gluten-free diet) 1 can kidney beans, drained and well rinsed 1 can black beans, drained and well rinsed 1 large onion, diced 1-2 green peppers, de-seeded and sliced 1/4 cup black olives, finely diced 1/2 cup broccoli, chopped 2-4 tablespoons unsweetened cocoa powder 2-4 tablespoons chili powder 1-2 tablespoons cumin 1-2 tablespoons paprika 1 tablespoon garlic powder, or more to taste 1/2 tablespoon cinnamon 1 teaspoon cayenne pepper, or more to taste (optional) Black pepper, freshly cracked

Chunky Vegetarian Borscht

This week, we not only went seasonal with our cooking , but we went ahead with some shared Eastern European ethnic food roots. If you don’t know, borscht is a beet soup traditionally made throughout Eastern Europe. I have plenty of not-so-fond memories of my father chowing down on some cold borscht topped with sour cream, which during my childhood seemed incredibly strange and gross.

This borscht recipe is great for the wintertime because it features so many hearty winter root vegetables. Of course, the star in this recipe is beets. I love the sweet earthy taste of beets, and this dish permeates with that flavor. A traditional Russian borscht recipe uses beef shank and beef broth, but this version of vegetarian borscht uses vegetable stock.

As I found out during cooking, there’s a lot of variation in terms of how a borscht recipe is made. Traditionally a borscht is just the resulting broth made from beets and the other ingredients, but we left the vegetables in to make it heartier and more filling. I remember my dad’s cold broth with sour cream, but my friend grew up eating it warm with dumplings. Like I said, it’s not the most authentic Russian borscht recipe, but the both of us were satisfied that the recipe achieved an authentic flavor.

Chunky Vegetarian Borscht

Ingredients:

2 bunches beets, about 6 beetroots in total 1 quart low sodium vegetable stock 1 large white onion, diced 1/2 bunch celery, chopped 6-8 carrots, chopped (I used purple carrots, but any carrot will do) 2 bay leaves 1/2 cup vinegar 3-4 cloves garlic 2 tablespoons honey (or more to taste) 2-4 tablespoons spicy brown mustard (or more to taste) 2 rosemary springs 1-2 pinches salt Black pepper, freshly cracked Dried thyme, to taste
